SUMMARY:From Confusion to Clarity : Understanding Your Body Through Awareness and Patterns
DESCRIPTION:Have you ever wondered if the foods you eat might be affecting how you feel? \nMany people experience digestive discomfort\, low energy\, brain fog\, inflammation\, or mood shifts without realizing that everyday foods can sometimes play a role. This course is designed to help participants develop a deeper awareness of the relationship between food and how the body responds. \nIn this 8-week educational course\, participants will learn how to observe patterns between food\, energy\, digestion\, sleep\, and overall well-being. Through guided discussions\, simple tracking tools\, and practical strategies\, students will gain skills that help them better understand their own body’s signals. \nParticipants will explore topics such as food awareness\, common food sensitivities\, symptom tracking\, and how some people use short-term food breaks to observe changes in how they feel. Those who wish to do so may choose to participate in a voluntary food elimination experiment during the course\, while others may simply focus on awareness and observation. \nThroughout the program\, students will learn how to identify patterns\, build confidence in making intentional food choices\, and develop their own personal approach to food that supports their lifestyle and wellness goals. \nEach participant will receive a downloadable digital workbook that includes journaling pages\, food awareness tracking tools\, and reflection exercises designed to support learning throughout the course. For those who prefer a physical copy\, a printed workbook will be available for optional purchase on the first day of class. \nBy the end of the course\, participants will leave with a clearer understanding of how food may impact their body and a practical framework they can continue using long after the course ends. \n*This course is educational in nature and is not intended to diagnose\, treat\, or cure medical conditions. \nWho This Course Is For \nThis course is designed for individuals who: \nAre curious about the connection between food and how they feel\nExperience symptoms such as low energy\, digestive discomfort\, brainfog\, or inflammation and want to better understand possible triggers\nWant to become more aware of their body’s signals and patterns related to food\nAre interested in learning practical tools for tracking food and symptom patterns\nAre open to exploring a short-term food elimination experiment to observe changes in how they feel\nWant to feel more confident making intentional food choices that support their overall well-being \nNo prior nutrition knowledge is required. Participants may engage with the course at their own comfort level-whether simply learning about food awareness or participating in the optional elimination experiment. \nWhat You’ll Walk Away With \nBy the end of this course\, participants will leave with: \nA deeper awareness of how food may influence energy\, digestion\, mood\, and overall well-being\nSimple tools for tracking food patterns and body responses\nA better understanding of common food sensitivities and how they may show up in everyday life\nPractical strategies for experimenting with short-term food breaks if they choose to do so\nA personal framework for making intentional food choices moving forward\nA downloadable Food Freedom Workbook filled with tracking sheets\, reflection prompts\, and educational resources that can continue to be used after the course ends \nParticipants will leave with greater confidence in listening to their bodies and making food choices that align with how they want to feel. \n*Class will not be held June 16th.\n*Class runs from June 2nd – July 28th\, 2026 (8wk course) Tuesdays Only. \nInstructor Bio: \nchristine.luncefordl6@gmail.com \nChristine Lunceford is a wellness educator\, author\, and advocate for helping individuals take an active role in understanding their health and wellness choices. \nAfter navigating her own journey of searching for answers beyond conventional approaches\, Christine began studying holistic wellness and root-cause health concepts in order to better understand how lifestyle and food choices can influence how the body feels and functions. \nChristine has completed two wellness education certifications through Scholastico: Holistic Health Practitioner and Naturopathy Practitioner. These programs covered areas such as nutrition\, lifestyle factors\, and whole-person wellness concepts. Christine is not a licensed practitioner and does not diagnose\, treat\, or cure medical conditions. She completed these certifications to deepen her understanding and better support others through wellness education and coaching. \nChristine is the author of Wrong Answer: Empowering YOU to Be Your Own Wellness Advocate and the creator of the EmpowerYOU Wellness framework\, which encourages individuals to become more aware\, informed\, and confident in the choices they make about their wellness. \nShe teaches from a practical\,real-life perspective and is passionate about helping people learn to listen to their bodies and make informed decisions that support their overall well-being.

SUMMARY:From Idea to Rough Draft: Write Your Book in 9 weeks
DESCRIPTION:Have you ever thought about writing a book—but didn’t know where to start or how to follow through? \nThis 9-week course is designed to help you move from scattered ideas to a completed rough draft in a supportive\, structured environment. Whether you have a clear idea or just a sense that there’s something you want to say\, this course will guide you step-by-step in getting it out of your head and onto paper. \nStudents will learn how to organize their thoughts using mind mapping\, clarify their message and audience\, and create a simple framework for their book. The focus is on building consistent writing habits while removing the pressure of perfection\, so you can make real progress each week. \nEach participant will create a personalized writing plan that fits their schedule\, allowing for both flexibility and accountability. \nEight weeks are dedicated to writing your draft\, with a final week focused on next steps—helping you understand what to do once your draft is complete. \nBy the end of the course\, you will have a structured outline\, a consistent writing routine\, and a completed rough draft you can continue to build on. \n*Students must bring a notebook or journal\, pen/highlighter\, computer or iPad. \n*No class will be held June 16th or August 4th \nInstructor Bio \nChristine Lunceford is an author\, course creator\, and educator who is passionate about helping others take ideas that have been sitting on their heart and finally get them onto paper. \nAfter writing the rough draft of her first book in just two months\, Christine developed a simple\, structured approach to help others move past overthinking and perfectionism so they can actually finish what they start. She understands firsthand what it takes to write while balancing real-life responsibilities—and she also knows the importance of accountability. Christine did not complete her book alone\, and she brings that same balance of encouragement and accountability into her teaching. \nChristine creates a supportive environment where students are challenged to stretch at a pace that is both realistic and sustainable. She is known for helping individuals stay consistent\, build confidence\, and follow through on goals that often feel overwhelming at the start. \nIn addition to her writing work\, Christine is the creator of the EmpowerYOU Wellness framework and is currently developing a self-paced book for her Food Freedom Method while researching future writing projects. \nHer course focuses on guiding students through eight weeks of structured writing to complete a rough draft\, followed by a final week dedicated to next steps—helping students understand what to do with their draft once it’s finished.

SUMMARY:Freeze-Dried Food Basics: Real Food Made Simple
DESCRIPTION:If you’ve ever been curious about freeze-dried foods but weren’t sure where to start\, this class will give you a clear and practical foundation. Freeze-dried foods are becoming more popular\, but many people don’t realize how simple they are to use in everyday life. \nIn this workshop\, you’ll learn what freeze-dried food is\, how it compares to other food preservation methods\, and why it works so well for both convenience and quality. We’ll walk through how to re-hydrate foods\, when you don’t need to\, and how to start incorporating freeze-dried ingredients into meals\, snacks\, and pantry staples. \nChristine\, along with her husband and sister\, has spent the past five years freeze-drying food for their families and business. What started as a way to store food has grown into a practical system for simplifying meals and reducing time in the kitchen—without sacrificing real ingredients. \nThis class focuses on simple\, real-life use—because “instant” doesn’t have to mean processed. You’ll leave with ideas you can start using right away\, whether you’re looking to save time\, reduce waste\, or just make meals a little easier. \nLimited seating available. Early registration is recommended. This workshop is part of a series. Check out the other available classes to continue building your confidence with freeze-dried foods. \nInstructor BIO: \nChristine Lunceford is the co-founder of Oh My Goodness Farm\, a small family business focused on helping people use freeze-dried foods and simple\, real-food solutions in everyday life. She works along side her sister\, Autumn\, and her husband\, combining their shared passion for practical\, healthy living. \nTogether\, they have been freeze-drying food for the past five years. What started as a way to store food and reduce waste for their own families has grown into a business where they teach others how to use freeze-dried ingredients in meals\, snacks\, and pantry cooking. \nChristine enjoys helping others discover that real food doesn’t have to be complicated—meals can be quick\, convenient\, and still made with simple\, wholesome ingredients.
